2 cups finely chopped fresh jalapeño peppers (seeds removed for less heat)
1 cup finely chopped onion
1 cup white vinegar
1/2 cup granulated sugar
1 teaspoon salt
1 teaspoon mustard seeds (optional)
1/2 teaspoon minced garlic (optional)
Instructions
Prepare the Ingredients:
- Wash and dry the jalapeño peppers. Remove the stems, and if a milder relish is desired, remove the seeds and membranes. Finely chop the jalapeños and onions.
Combine and Cook:
- In a medium saucepan, combine the chopped jalapeños, onions, vinegar, sugar, salt, mustard seeds, and garlic.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Once boiling, reduce the heat to low and let it simmer for about 10–15 minutes, or until the vegetables have softened and the mixture has thickened slightly.
Cool and Store:
- Remove the saucepan from heat and allow the relish to cool to room temperature.
- Transfer the cooled relish to sterilized jars or airtight containers.
- Seal tightly and refrigerate. The relish can be stored in the refrigerator for up to 2 weeks.
Notes
- For a sweeter relish, increase the amount of sugar to 3/4 cup.
- If you prefer a spicier relish, retain some or all of the jalapeño seeds.
- This relish pairs well with grilled meats, sandwiches, burgers, and hot dogs.
